But when you slide your stud finder across the wall you can only find one stud probably right in the middle if it s over the fireplace.

If there is a doubt about only two screws holding the weight involved then use larger screws and pre drill the stud with a smaller bit size to keep from splitting the stud.
For the remaining screws just use a hollow wall anchor.
Drill holes in the mounting bracket to where it centers on the wall and the new holes hit stud center.
Holding a light near the wall as you look along it can help you find the imperfections.
